This Cajun-inspired soup is hearty and flavorful, combining a variety of beans with turkey and Andouille sausage for a satisfying meal.
Ingredients:
- 1 package Cajun-style 15 bean soup mix
- 1 pound turkey breast, diced
- 1 pound Andouille sausage, sliced
- 1 onion, diced
- 2 stalks celery, diced
- 1 bell pepper, diced
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 8 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Rinse the beans and soak them overnight in water
In a large pot, brown the turkey and Andouille sausage over medium heat
Add the onion, celery, bell pepper, and garlic
Saut until vegetables are softened
Stir in the diced tomatoes, chicken broth, drained beans, bay leaves, thyme, oregano, paprika, and cayenne pepper
Bring the soup to a boil, then reduce the heat and simmer for about 1 1/2 to 2 hours, or until the beans are tender
Season with salt and pepper to taste
Serve hot, garnished with chopped fresh parsley
