Deconstructed Falafel Salad

This Deconstructed Falafel Salad is a tasty and healthy take on traditional falafel. It has crunchy chickpeas, fresh vegetables, and a creamy tahini dressing. You can eat it for lunch or dinner.

Ingredients:

  • 1 cup chickpeas, cooked and drained
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons tahini sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • Olive oil for frying
  • Mixed greens for serving

Instructions:

In a bowl, mix the cooked chickpeas, red onion, cucumber, cherry tomatoes, and fresh parsley

In a separate small bowl, whisk together tahini sauce, lemon juice, minced garlic, ground cumin, ground coriander, salt, and pepper to make the dressing

Heat olive oil in a pan over medium heat

Add the cooked chickpeas and fry until they turn golden and crispy, about 5 minutes

Remove from heat and drain on paper towels

To serve, place a bed of mixed greens on a plate

Arrange the crispy chickpeas and the mixed salad mixture on top

Drizzle the tahini dressing over the salad

Finish with a sprinkle of extra fresh parsley and a pinch of salt and pepper if desired
