Ingredients:
- 4 eggs, hard-boiled and peeled
- 1/2 cup cashew nuts
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 cup yogurt
- Salt to taste
- Fresh curry leaves for garnish
- Water as needed
Instructions:
In a blender, grind the cashew nuts with a little water to make a smooth paste
Set aside
Heat oil in a pan and add cumin seeds
Let them splutter
Add chopped onions and saut until they turn translucent
Add ginger-garlic paste and cook for a minute until the raw smell disappears
Add the tomato puree and cook until the oil separates from the masala
Add coriander powder, turmeric powder, red chili powder, and salt
Cook for a few minutes until the spices are well roasted
Whisk the yogurt and add it to the pan
Cook on low heat, stirring continuously, until the mixture thickens
Add the cashew nut paste and continue to cook, stirring, for a few more minutes
Pour in enough water to achieve your desired gravy consistency
Gently slice the hard-boiled eggs into halves and add them to the gravy
Simmer for 5-7 minutes to allow the flavors to meld
Sprinkle garam masala and garnish with fresh curry leaves
Serve the creamy egg masala curry hot with rice or naan
