Ingredients:
- 1 cup peanut butter
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups old-fashioned oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup candy-coated chocolate pieces
- 1/2 cup chopped nuts optional
Instructions:
Preheat the oven to 350F 175C and line baking sheets with parchment paper
In a large bowl, cream together the peanut butter, brown sugar, and softened butter until smooth and well combined
Add the eggs and vanilla extract to the peanut butter mixture, and mix until fully incorporated
In a separate bowl, whisk together the oats, all-purpose flour, baking soda, and salt
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Stir in the chocolate chips, candy-coated chocolate pieces, and chopped nuts if using
Scoop spoonfuls of cookie dough onto the prepared baking sheets, leaving space between them
Bake in the preheated oven for 10-12 minutes, or until the cookies are golden around the edges
Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
