Ingredients:
- 1 cup red velvet cake mix
- 1/2 cup unsalted butter, softened
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 2 cups vanilla ice cream
Instructions:
Preheat oven to 350F 175C
In a bowl, mix together red velvet cake mix, softened butter, egg, and vanilla extract until well combined
Add flour, cocoa powder, baking powder, and salt, and mix until a dough forms
Fold in chocolate chips
Roll dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper
Flatten each ball slightly with your palm
Bake for 10-12 minutes or until edges are set
Let the cookies cool completely on a wire rack
Once cooled, scoop a generous amount of vanilla ice cream onto the flat side of one cookie
Top with another cookie to form a sandwich
Repeat with remaining cookies and ice cream
Place the sandwiches in the freezer for at least 30 minutes to firm up before serving
