Pasta Fagioli, a classic Italian dish, combines hearty beans with pasta in a flavorful broth. This comforting dish is perfect for a cozy dinner and is packed with wholesome ingredients.
Ingredients:
- 1 cup ditalini pasta
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 can 15 oz cannellini beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Follow the directions on the package to cook ditalini pasta
Remove the water and set it aside
Put olive oil in a big pot and heat it over medium-low heat
Put in the celery, carrots, onion, and garlic
For about 5 to 7 minutes, or until the vegetables are soft, cook
After adding the vegetable broth, oregano, basil, and diced tomatoes, mix them in well
Bring it to a low boil, then cook for 15 to 20 minutes
Put the cooked pasta in the pot and mix it all together
Add pepper and salt to taste
Serve hot with fresh parsley chopped on top
